Pure acacia honey is sometimes listed as "water white" or "extra white" due to its extremely clear texture and nearly transparent colour. You will find it named 'water honey' or 'moonflower honey' due to its distinctively pale colour.

Being one of the lightest coloured honey, raw honey offers naturally mellow, gentle sweetness, which is complemented with floral undertones and vanilla flavour. This combination of floral and grassy notes makes it taste fresher. Surprisingly, it has no aftertaste.

This organic raw honey is runny and very light in texture. It stays liquid without sugaring (due to high fructose content).

Background: 

The Robinia pseudoacacia flower is the scientific name for black locust or false acacia tree on which honeybees feed and produce acacia, honey. Blossoms grow from late May till early June. The honeybees are attracted to acacia because of the extraordinary fragrance of flowers.

You can find approximately 1,300 or more species of acacias. The Fabaceae family, it is native to Eastern Europe. Typically, the acacia flower is found in tropical and temperate regions. Honey is chiefly harvested from the Appalachian Mountains, along with Valcea (Romania) being a central producing country.
